* Exported from MasterCook * Banana Cream Chiffon Pie Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Pies Desserts Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups Graham cracker crumbs 1/3 cup Margarine -- melted 3 tablespoons Sugar -----FILLING----- 1 cup Top milk** (see note) 3 Egg yolks 1/4 cup Sugar 1/4 teaspoon Salt 1 tablespoon Unflavored gelatin 1/4 cup Cold water 1 1/2 teaspoons Vanilla 3 Egg whites 1/4 cup Sugar 3 Bananas -----TOPPING----- 1/2 cup Whipping cream -- whipped 1. For crust, combine crumbs, margarine and sugar in bowl; blend well with fork. Spoon crumb mixture into 9" pan; set 8" pan on top and press to make even crumb layer. Remove 8" pan. Bake crust at 375 degrees for 8 minutes, if desired, or use as it. 2. To make filling, scald milk **(use whole milk with 3 T cream) in top of double boiler. In small bowl, beat egg yolks, sugar and salt. Stir into hot milk; continue cooking until mixture coats spoon (soft custard). 3. Meanwhile, soak gelatin in cold water; let stand 5 minutes. Add to custard along with vanilla; cool mixture over ice water until it thickens. 4. Beat egg whites until foamy; add sugar gradually, beating until stiff. Fold into cooled custard. Set aside. 5. Slice 1 banana over bottom crust. Pour custard over banana slices. Slice 1 banana on top of custard. Beat whipping cream and pile on top of pie.
