* Exported from MasterCook * Greek Country Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads Relishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 small onion -- D 2 large ripe tomatoes -- cut into wedges 1 green bell pepper -- cut into strips --or yellow bell pepper 1/2 European cucumber (long) cut -- cut into 1-in pieces -- thin half slices 2 tablespoons extra virgin olive oil 2 teaspoons wine vinegar 1 teaspoon dried oregano -- crumbled salt -- to taste fresh ground pepper -- to taste 8 Kalamata olives or other black olives -- 8 to 12 olives 4 ounces feta cheese -- cut into cubes Halve the onion,and thinly slice each section.Seoerate slices into slivers.If desired,rinse pieces with cold water so onion is milder. Pat dry. Toss onion with tomatoes,green pepper,and cucumber in large salad bowl, or arrange on platter.
