* Exported from MasterCook * Taffy Apple Salad Recipe By : Serving Size : 20 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 20 ounces pineapple chunks in juice 2 cups miniature marshmallows 1/2 cup granulated sugar 1 tablespoon all-purpose flour 2 tablespoons vinegar 1 egg -- beaten 6 cups red and/or green apples -- cubed 8 ounces frozen whipped dessert topping --thawed 10 ounces maraschino cherries --drained, halved 1 cup peanuts Drain the pineapple, reserving the juice. In a large bowl, stir together the pineapple chunks and marshmallows; cover and chill for up to 24 hours. Meanwhile, for the dressing, in a small saucepan, stir together the sugar and flour; add the reserved pineapple juice, vinegar and egg. Cook and stir over medium heat just until the mixture bubbles; reduce heat. Cook and stir for 2 minutes longer. Transfer the mixture to a small bowl . Cover the surface of the mixture with plastic wrap and chill.
