* Exported from MasterCook * Made in Heaven Pasta Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Fish Main Dish Pasta Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Salmon -- fresh 1 Bay leaf 1/2 teaspoon Black peppercorns 1 Slice of onion 1 Slice of lemon 8 ounces Angel-hair pasta 2 Red bell peppers -- cut into strips 1 Green bell pepper -- cut into strips 1 Zucchini -- cut into thin strips 1 Yellow squash -- cut into strips 2 Green onions, -- thinly sliced strips Juice & peel of one lemon 2 teaspoons Honey mustard 10 milliliters Garlic -- finely minced 1/2 teaspoon Salt 1/4 teaspoon Freshly ground black pepper 1/2 cup Olive oil 1/4 cup Fresh dill -- chopped 2 tablespoons Red caviar (Optional) Cover salmon with cold water, add bay laf, peppercorns, onion and lemon slices; bring to a boil, cover, reduce heat and simmer until the salmon is cooked, allowing 10 minutes per inch of thickness or until the fish is no longer translucent when tested with a fork. Remove salmon from liquid and chill. Break pasta in half and cook according to package directions. Drain, rinse and toss with bell peppers, zucchini, yellow squash and green onions. Set aside. To prepare dressing: Combine lemon peel and juice with the mustard, mixing well. Add the garlic,, shallot, salt and pepper, blend. Slowly add the olive oil and mix until smooth. Stir in the fresh dill. Break the salmon into small pieces and add to the pasta and vegetables.
