* Exported from MasterCook * Hawaiian Sweet Potato Casserole (Uala Maoli) Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Casseroles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 Large sweet potatoes (or use a 40-oz can) 6 Tablespoons butter 2 Teaspoons salt 6 firm ripe bananas -- sliced 1 Cup light brown sugar -- Mixed With 1 Teaspoon cinnamon 16 Ounces crushed pineapple 1 Cup pineapple juice -- Mixed With 1 Teaspoon lemon juice 2 Tablespoons honey Raw Sweet Potatoes:Wash, scrub, and place in cold water. Cover, bring to a boil and parboil until they still show a little resistance when pierced with the tip of a sharp knife. Drain, cool slightly, peel. Canned Sweet Potatoes: Drain. Check can for salt content and you may wish to adjust salt accordingly Slice potatoes 1/2-inch thick. Grease a heatproof casserole dish with a little of the butter. Arrange in alternate layers starting with the sweet potatoes dotted with butter and salt, then the bananas sprinkled with brown sugar/cinnamon mixture, then the crushed pineapple. End with the sweet potatoes or the crushed pineapple. Combine the pineapple juice and lemon juice and honey and pour over the mixture. Bake in a preheated oven 350 oven for 40 minutes, or until browned on top. (See note) - - - - - - - - - - - - - - - - - -
