* Exported from MasterCook * Purple Asparagus Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh purple asparagus 1/2 cup egg white -- hard boil, chop 1/2 cup fresh basil -- chop 1/2 cup gorgonzola cheese -- crumble 1/3 cup extra virgin olive oil 1/3 cup balsamic vinegar 1 teaspoon garlic -- mince 1 teaspoon sugar or honey 1 tablespoon dijon mustard 1 teaspoon dried crushed oregano leaves -- or 1 teaspoon fresh oregano -- mince salt and pepper Slice asparagus into small pieces cutting at an angle. Place in even layer on serving platter. Top with egg white, then basil and, last, the Gorgonzola. Mix together the oil, vinegar, garlic, sugar or honey, mustard and oregano. Season with salt and pepper. Pour over platter, toss gently and serve.
