* Exported from MasterCook * Fresh Apple Nut Cake with Caramel Icing Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Apples Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups Sifted flour 1 teaspoon Baking powder 1 teaspoon Salt 1 teaspoon Baking soda 1 teaspoon Cinnamon 3/4 cup Oil 4 cups Apples -- finely chopped (about 6) 1 teaspoon Vanilla 2 Eggs 2 cups Sugar 1 cup Pecans -- finely chopped Caramel Icing: 2 1/2 cups Sugar 3/4 cup Milk 1 Egg 1/2 cup Sugar 1/2 Stick butter 1 teaspoon Vanilla Preheat oven to 350 degrees. In a lg mixing bowl, sift flour, baking powder, soda, salt, & cinnamon. Add oil, apples & vanilla. Beat at md speed for 2 min. until well blended. In another bowl, beat eggs until light yellow in color. Gradually add sugar & continue beating until light & fluffy. Fold egg mixture into the apple mixture, blending thoroughly. Stir in nuts. Pour into lightly greased 10" tube pan. Bake at 350 degrees for 1 hr. & 10 min. or until done. Caramel Icing: MIx 2 c sugar, milk & egg & bring to a boil. Brown 1/2 c sugar in skillet, then add it to egg mixture while boiling. Boil until cool, then add a little butter & vanilla. Cool & spread over cake. - - - - - - - - - - - - - - - - - -
