* Exported from MasterCook * Lemon Filling & Fluffy Frosting Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Cakes From Scratch Low Fat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Lemon Filling: 1/4 cup sugar -- plus 2 tablespoons sugar 3 tablespoons cornstarch 1/4 teaspoon salt 1 1/3 cups milk, 2% lowfat 2 tablespoons margarine 1 teaspoon lemon rind -- grated 1/4 cup fresh lemon juice -- plus 2 tablespoons fresh lemon juice Fluffy Frosting: 1/2 cup sugar 3 tablespoons water 1/8 teaspoon cream of tartar 1 dash salt 1 egg white For Lemon Filling: Combine sugar, cornstarch and salt in a saucepan. Gradually add milk, stirring with a wire whisk until the mixture is well blended. Add margarine. Bring to a boil over medium heat, and cook for 1 minute, or until thickened, stirring constantly. Remove from heat; stir in lemon rind and lemon juice. Pour into a bowl; cover and chill. For Fluffy Frosting: Combine sugar, water, cream of tartar, salt and egg white in the top of a double boiler; place over simmering water.
