* Exported from MasterCook * Fog's Whiskey Cake Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Bundt Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups Water 1/2 cup Jack Daniels 1 tablespoon Instant coffee 1 1/4 cups Unsalted butter 1 cup Unsweetened cocoa powder 2 cups Sugar 2 Eggs 2 cups Flour 2 teaspoons Baking powder 1/8 teaspoon Salt 1 cup Pecans -- chopped 2 tablespoons Jack Daniels In a VERY LARGE saucepan, heat & stir water, whiskey, coffee, butter and cocoa until butter melts. Remove from heat and beat in sugar. Cool slightly, then whisk in the eggs, blending thoroughly. In a large mixing bowl, stir together the flour, baking powder and salt, using a whisk to blend completely. Beat into the chocolate mixture until incorporated. Stir in pecans. Turn the batter into a greased & floured 9" tube pan. Smooth the top of the batter with a spatula. Bake the cake on the middle level of a preheated oven (325~) for 60-75 minutes until a cake tester or skewer comes out clean. IMMEDIATELY sprinkle with the remaining 2 tbsp whiskey, or wrap in a whiskey-soaked cheese cloth after it has been cooled on a rack and removed from the pan.
