Sprinkle leeks over the potato layer, cover with remaining potato slices and season with salt, pepper and/or Creole seasoning. Scatted red pepper over the top. Beat milk, eggs, parsley and a dash of salt, pepper and nutmeg together and pour over potatoes. Bake in preheated 425~ oven for 15 to 20 minutes.
