* Exported from MasterCook * Hachis Parmentier (Beef & Potato Casserole) Recipe By : Le Cordon Bleu School of Cooking, Paris, Serving Size : 8 Preparation Time :0:00 Categories : Beef Casseroles Low Sodium French Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds ground beef, lean 3 tablespoons onion -- Chopped 2 tablespoons margarine 1/4 teaspoon Salt -- or to taste 1/4 teaspoon Pepper -- or to taste 1 teaspoon vinegar 4 pounds potatoes -- Peeled 1 cup milk, 2% lowfat Melt 1 tablespoon of the butter in a pan without browning it, and add finely chopped onions, cooking until limp and transparent. Add the beef, salt, pepper and vinegar. Cook the beef until medium-rare. Butter a casserole dish that can be placed in an oven. Spread beef in casserole and cover with potato puree (recipe follows). Dot the top of the potatoes with chunks of butter and broil until brown, approximately 10 minutes. Potato Puree: Place peeled potatoes in cold, salted water, bring to a boil and cook 20 minutes.
