* Exported from MasterCook * El Dorado Beef Cheese Casserole Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Ground Beef Casserole Mexican Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Ground beef 1 tablespoon Instant minced onion 1/2 teaspoon Garlic salt 1 can Tomato sauce (15 oz) 1 cup Ripe olives; chopped -- sliced 1 cup Dairy sour cream (1/2 pint) 1 cup Cottage cheese -- small curd 1 can Green chillies; chopped -- drained (4 oz) 1 package Tortilla chips (8 oz) 2 cups Jack cheese -- grated (8 oz) In frying pan, cook ground beef until brown and crumbly. Drain off excess fat. Add onion, garlic salt, and tomato sauce. Cook, covered, over low heat until just heated. Remove from heat and set aside. Combine sour cream, cottage cheese, green chilies, and sliced olives. Set aside. Crush tortilla chips slightly, reserving a few whole chips for garhish, if desired. Place half of the chips in a well buttered 2 1/2 quart casserole dish. Now add half of the meat mixture; cover with half of the sour cream mixture and sprinkle with half of the grated cheese. Repeat layers. Bake uncovered in 350-degree oven 30-35 minutes or until bubbly hot. Garnish with reserved tortilla chips. Serve with sour cream if desired. - - - - - - - - - - - - - - - - - -
