                           Enchilada Casserole

   1      pound         Ground beef
   2      tablespoons   Shortening
   2      tablespoons   Chili powder
   6      tablespoons   Flour
                        Garlic, salt -- and pepper to
                        Taste
   1      quart         Water
  12                    Corn tortillas
   1 1/2  cups          Chopped onion
   1 1/2  cups          Longhorn cheese grated

Braise ground beef in shortening. Add chili, flour, and other seasonings.
cook 5 more minutes, add water and bring to a boil. cook 8-10 minutes.
 Dip tortillas in hot deep fat. Build up alternate layers of tortillas, onion,
 cheese and chili i a 8 inch deep casserole.
 Heat in 375 oven for 20-25 minutes until bubbly.
