* Exported from MasterCook * Very Veggie Chili Recipe By : Bon Appetit Serving Size : 6 Preparation Time :0:00 Categories : Vegetables Beans Bon Appetit Chili Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 Tablespoons Vegetable oil 3 Celery stalks -- chopped 1 Onion -- chopped 1 Green bell pepper -- chopped 8 Cloves Garlic -- chopped 4 Cans Mexican-style stewed tomato 2 Cans Pinto Beans 14.5 Ounces -- Drain, Chopped 1 Can Golden Hominy 16 Ounces -- drained 1 Can Whole Kernel Corn 11 Ounces -- Drained 1 Can Diced Green Chilies, 4 Ounces 1 Cup Chopped Fresh Cilantro 1/4 Cup Chili powder 1 Tablespoon Ground cumin Heat oil in heavy Dutch oven over high heat. Add celery, onion, bell pepper and garlic and saute until vegetables begin to soften, about 8 minutes. Add all remaining ingredients. Reduce heat to medium-low and simmer until chili thickens, stirring occasionally, about 35 minutes. (Can be prepared 2 days ahead.) Cover and refrigerate.
