* Exported from MasterCook * Baked Bananas And Rhubarb Recipe By : Aunt Sammy's Radio Recipes 1931 Serving Size : 1 Preparation Time :0:00 Categories : Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 quarts rhubarb -- cut in 2-inch -- pieces 4 bananas -- ripe 1 cup sugar 1/4 teaspoon salt 2 tablespoons butter -- or other fat Select tender rhubarb, wash well, and cut in 2-inch pieces without removing the red skin. Peel and scrape the bananas and split lengthwise. In a greased shallow baking dish, place a layer of the rhubarb, add the banana halves, and then the remaining rhubarb, sprinkle the salt and sugar over the top, dot with the fat, cover, and bake in a moderate oven for 20 minutes, or until the fruit is tender.
