* Exported from MasterCook * Kesti's Rhubarb Bread Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- PLACE IN MIXING BOWL 1 1/2 cups Light brown sugar 2/3 cup Oil 1 egg 1 teaspoon Salt 1 teaspoon Baking Soda 1 teaspoon Vanilla STIR WELL..THEN ADD 1 cup Buttermilk OR 1 cup Sour Cream STIR WELL..THEN ADD 2 1/2 cups all-purpose flour STIR WELL..THEN ADD 1 1/2 cups Rhubarb -- Diced 1/2 cup Nuts -- optional STIR Grease 2 glass bread pans well. Mix 1/2 cup white sugar and 1 tablespoon butter in a small bowl and sprinkle into the bottoms of the bread pans. Pour in rhubarb batter evenly divided between two pans. Place on middle oven rack. Bake at 325F for 1 hour. Knife in center should come out clean. Allow pans to cool for 5 minutes. Invert onto plate or foil.
