* Exported from MasterCook * Continental Strawberry Cheesecake Recipe By : Serving Size : 14 Preparation Time :0:00 Categories : Cheesecakes Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -----CRUST----- 2 cups Graham cracker crumbs 1/4 cup Finely ground almonds 1/4 cup Sugar 6 tablespoons Butter; -- softened -----FILLING----- 1 1/2 pounds Cream cheese -- softened 3/4 cup Sugar 3 Eggs 1/2 cup Heavy cream 1 1/2 teaspoons Vanilla 1 cup Sliced fresh strawberries -----TOPPING----- 1 cup Strawberry preserves 1 cup Almonds -- slice fine/toasted In medium bowl, combine crust ingredients and press mixture onto the bottom and sides of a well buttered 9 inch spring- form pan. Chill in the freezer for about 30 minutes. In a large bowl, beat cream cheese, sugar, and eggs until very smooth. Add heavy cream and vanilla, and continue to beat till very smooth and creamy. Fold in the berries and pour mixture into chilled pan. Place the springform pan inside a larger pan containing 1 inch of water and bake in a preheated 325 oven for 1 1/2 hours. Transfer cake to wire rack and allow to cool completely. Topping: Carefully remove sides of pan and spread preserves evenly over the top of the cake.
