* Exported from MasterCook * Fiesta Shrimp Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Barbecue Fish Cheese Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound Large shrimp Heavy Duty Reynolds Wrap Aluminum Foil 1 tablespoon Olive oil 2 teaspoons Creole seasoning -- divided 1 large Sweet red pepper -- chopped 1/2 cup Fresh or frozen whole kernel Corn 1/2 cup Sargento 4 Cheese Mexican Recipe Blend Cheese 2 tablespoons Fresh cilantro -- minced 15 ounces Can black beans -- drained Weber Charcoal Kettle or Weber Genesis Gas BBQ Hot cooked rice Peel and devein shrimp. Tear off 1 (24- x 18-inch) sheet of aluminum foil. Place shrimp in center of foil. Drizzle olive oil over shrimp; sprinkle with 1 teaspoon Creole seasoning. Toss until shrimp are coated. Arrange red pepper in a single layer over shrimp; sprinkle corn, cheese, and cilantro over red pepper. Pour black beans over top and sprinkle with remaining 1 teaspoon Creole seasoning. Bring edges of foil together over shrimp; fold down loosely in locked folds. Crimp edges to seal. Place package in center of cooking grate. Grill for 10 to 15 minutes. Serve over rice.
