* Exported from MasterCook * Marlin with Tomato & Fennel Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Seafood Fish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup Fresh fennel (1 bulb) -- slice 1/2 inch 1/4 cup Fresh fennel weed -- chopped 1/2 teaspoon Pepper -- coarsely ground 1/2 teaspoon Slt 1 teaspoon Fresh garlic -- finely chopped 1 tablespoon Olive or vegetable oil 2 Marlin, swordfish -- or tuna steaks -- 1-inch thick (about 8 oz. ea.) 1/3 cup Calamanta olives; halves -- pitted 3 medium Ripe roma tomatoes -- sliced -inch 1 teaspoon Lemon peel -- grated Prepare grill placing coals to one side; heat until coals are ash white. Make grilling pan with rectangle of double thickness heavy-duty aluminum foil or use purchased foil pan. Place fennel, fennel weed, 1/4 tsp. pepper, garlic, and oil in grilling pan. Place on grill above coals. Place marlin steaks opposite coals; sprinkle with remaining pepper and salt. Grill fennel, stirring occasionally, until fennel is tender (7 to 9 minutes). Grill marlin steaks, turning once, until fish flakes with a fork (7 to 9 minutes). Stir olives until fennel mixture. Cut each marlin steaks into 2 servings. For each serving place tomatoes on individual serving plate; top with marlin and fennel mixture. Sprinkle with lemon peel. Yield: 4 servings.
