* Exported from MasterCook * Swordfish Shish Kebab Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Fish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds swordfish -- cubed 1 clove garlic -- crushed 1/4 cup parsley -- chopped 1/4 cup lemon juice 2/3 cup peanut oil 1 tablespoon fresh thyme -- chopped 3 drops tabasco sauce 12 cubes sweet onions 12 cubes green pepper 12 cherry tomatoes 1 stick butter -- melted 1/2 lemon juice salt and pepper Mix garlic, oil, parsley, lemon juice, thyme, tabasco, salt and pepper to taste. Add swordish, refrigerate for an hour. Then arrange swordfish cubes, onion, green pepper and cherry tomatoes alternately in skewers. Grill, turning once, until the fish is flaky. Push the kebabs gently off the skewer or the tomatoes will collapse. Pour melted butter and lemon juice over the swordfish kebabs and serve at once.
