* Exported from MasterCook * Cool And Creamy Mango Pie Recipe By : THE DESSERT SHOW SHOW #DS3161 Serving Size : 1 Preparation Time :0:00 Categories : Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Graham cracker crumbs for pie crust mixed with melted butter and 2 Tablespoons sugar 2 Large ripe mangoes 1/4 Cup water 1 Envelope unflavored gelatin 5 egg yolks 2 Tablespoons fresh lime juice 1/2 Cup sugar (divided) 1 Teaspoon ground ginger 1 Cup whipping cream Grated zest of 1 lime 1 Cup dry curd cottage cheese or regular cottage cheese -- drained 2 Sheets frozen puff pastry thaw/each cut into 9 inch circles Preheat oven to 325 degrees. Pat crumb mixture into 9 inch pie plate and bake 10 minutes. Cool completely. Peel and slice mangoes. Puree pulp in food processor and set aside. Mix together water and gelatin. Let it stand a few minutes to soften gelatin. In saucepan whisk egg yolks with lime juice and 1/4 cup sugar. Cook over medium heat, whisking constantly, until mixture is thick and hot. Do not boil. Whisk in softened gelatin for 30 seconds. Pour mixture into a bowl and stir in mango puree and ginger. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. Beat whipping cream with 1/4 cup sugar until stiff peaks form. Fold stiff whipped cream into mango mixture. Gently scrape filling into crust. Chill a few hours.
