* Exported from MasterCook * Kiwi Cream Pie Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Pies Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups Vanilla wafers -- crushed (36) 1 teaspoon Cinnamon 1/3 cup Butter -- melted -----FILLING----- 1 package Unflavored gelatin 1/2 cup Water -- cold 8 ounces Plain yogurt 1/2 cup Sugar 1 tablespoon Lemon juice 1 cup Whipping cream -- divided in 2 equal parts 2 Kiwi fruit; peeled -- sliced In a mixing bowl, combine wafers, cinnamon, butter. Press into the bottom of a 9" pie pan. Chill for 1 hour. In a small saucepan, soften gelatin in cold water. Cook and stir over medium heat until gelatin is dissolved. Cool and beat together with yogurt, sugar, and lemeon juice. Chill until partially set, stirring occasionally. Beat 1/2 C whipping cream until soft peaks form. Fold whipped cream into gelatin mixture. Turn into chilled crust. Cover and chill for several hours. Just before serving, arrange sliced kiwi around edge of pie. Beat remaining 1/2 C whipping cream to soft peaks. Spoon into center of pie and garnish with remaining kiwi fruit slices. - - - - - - - - - - - - - - - - - -
