* Exported from MasterCook * Bob Hope's Favorite Lemon Meringue Pie Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Desserts Pies Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Baked pie shell 1 cup + 2 T. sugar 3 tablespoons Cornstarch 1 cup Water 4 Egg yolks 2 tablespoons Butter Grated lemon peel 4 tablespoons Lemon juice Pinch of salt -----MERINGUE----- 3 Egg whites 2 1/2 tablespoons Sugar . Filling: In top of double boiler, combine sugar, cornstarch & add water slowly, stirring constantly until thick and smooth. (May have to add more cornstarch). Add slightly beaten egg yolks, butter, lemon rind, juice and salt, mixing carefully and thoroughly. Cook for 2-3 minutes. For meringue: Beat egg whites and sugar until stiff. Pour lemon mixture into pre-baked pie shell and cover with meringue. Bake in 300 degree oven for 15 minutes or until meringue is light brown. - - - - - - - - - - - - - - - - - -
