* Exported from MasterCook * Luscious Peach Pie Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup Flour 1/2 cup Pecans -- chop fine 1/2 cup Margarine -- soften (1 stick) 1/4 cup Light brown sugar -- pack firm 2 tablespoons Orange juice 1 tablespoon Lemon juice 4 cups Marshmallows* -- (1 10-1/2 oz package 2 cups Fresh peaches -- crushed 1 cup Heavy whipping cream *NOTE: Miniature marshmallows will melt faster, but either large or small ones will do. Preheat oven to 375 degrees. Combine flour, pecans, butter and brown sugar with pastry blender until well blended. Press firmly into a 9- or 10-inch pie pan. Bake 15 minutes. Cool. Put orange juice and lemon juice into a 2-quart saucepan. Bring to a boil. Remove from heat. Add marshmallows. Turn heat very low. Cook and stir constantly until marshmallows are completely melted and smooth. Remove from heat. Whip cream until stiff. Stir crushed peaches into marshmallow mixture, then fold in whipped cream. Pour into pie crust.
