Mix in egg. reserve 1/2 cup crumbs; pat remainder into bottom and sides of 10-11 inch flan pan with removable bottom. filling: peel and slice pears; arrange in crust lined pan. beat eggs until thick and lemon colored. beat in sugar. Add melted butter, cream, vanilla, lemon peel and flour . Blend well. Pour over pears. Sprinkle with reserved 1/2 cup crumbs. Bake 425 for 15 minutes.
