* Exported from MasterCook * Ginger Pear Pie Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups Sliced pears -- about 2 1/4 lbs; who 1/2 cup Sugar -- plus 1 tsp 1 3/4 tablespoons Cornstarch 1/8 teaspoon Salt 2 tablespoons Crystallized ginger -- finely chopped Juice of 1/2 lemon 1 teaspoon Tangerine zest Pie Dough for 9" double -- crust pie 3 tablespoons Butter 1 Egg 1 tablespoon Water Put the sliced pears in a bowl. Combine the 1/2 cup sugar, cornstarch, and salt and sprinkle over the pears. Toss well and season with ginger, lemon, and tangerine zest. Set aside for 15 minutes while you roll out 1 piece of dough to fit into the bottom of a pie pan. Roll out the second piece. Fill the pie with the fruit, dot all over with bits of the butter, and moisten the edges of the bottom crust with water. Cover with a top layer of dough, crimping or pinching to seal. Glaze the pastry, if you like, with the egg well-beaten with water and brushed on evenly and lightly. Sprinkle the teaspoon sugar over all, again if you like. Cut steam vents in the top crust.
