* Exported from MasterCook * Partridge-In-A-Pear-Tree Pie Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Pies Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups Cranberries -- 12 ounces 1 1/2 cups Sugar 8 1/4 ounces Crushed pineapple -- drained reserve syrup Pastry for 9" 2-crust pie 3 tablespoons Flour 1/4 teaspoon Salt 1/4 teaspoon Cinnamon 8 1/2 ounces Pear halves; drained -- cut in half again Sugar Cook cranberries, sugar, pineapple and reserved 1/4 cup of pineapple juice, stirring constantly, until cranberries pop, about 5 minutes. Cool. Heat oven to 400~. Prepare pastry. Mix flour, salt and cinnamon; stir into cranberry mixture. Pour into prepared crust. Gently press pear slices, spoke-fashion, onto cranberry mixture. Roll remaining pastry into a 9" circle. Decorate top of pie (see below). Cover edge of pie with 2-3" strip of foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake until crust is golden brown, about 40 minutes. Make a partridge-in-a-pear-tree design cut-outs for top as follows; for tree trunk, cut a strip about 8" long, 2" wide at top tapering down to 1" at other end. Sprinkle with sugar; place on center of pie. Cut 4-6 tapered narrow strips for branches; sprinkle with sugar and place on top of pie coming of trunk.
