* Exported from MasterCook * Perfect Pear Pie Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups Hard pears -- peeled, cored, slice 2 tablespoons Water 1/3 cup White sugar 1/3 cup Brown sugar 1/4 teaspoon Nutmeg 1/4 teaspoon Cinnamon 3 tablespoons Cornstarch 3 tablespoons Butter -- melted 2 tablespoons Lemon juice 1 tablespoon Orange juice 9 pastry double-crusted pie Combine pears, water, and white sugar; boil for 5 minutes. Remove from heat; add brown sugar, nutmeg, cinnamon, cornstarch, butter, lemon and orange juice. Mix well. Pour into chilled pastry shell. Roll out remaining pastry and fit over filling. Fold edge of top crust under edge of bottom crust; press together with fingertips or fork to seal. Make several slits near center of pie for steam to escape. Bake in a 450 oven for 10 minutes.
