* Exported from MasterCook * Delicious Strawberry-Coconut Pie Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Pies Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 envelope unflavored gelatin 1 cup Milk 1 pint Strawberry ice cream 1 package 4-serv-instant coconut cream -- pudding mix 1 cup Strawberries 8 ounces plain yogurt 1 9" baked pastry shell -- cooked 1/2 cup Whipped cream 2 tablespoons Sugar In a small saucepan, soften the gelatin in milk for 5 minutes. Stir over low heat until gelatin dissolves. Remove from heat; add ice cream by spoonfuls, stirring until melted. Stir in coconut cream pudding mix, strawberries and yogurt. Place in mixer bowl. Beat with electric mixer on low speed for 1 minute. Turn mixture into pastry shell. Beat cream and sugar until soft peaks form (tips curl over). Spread atop pie.
