* Exported from MasterCook * Bean and Onion Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds Mixed yellow, green -- & purple string beans 1 large Vidalia onion -- sliced thin 3/4 cup Cider vinegar 1 tablespoon Balsamic vinegar 1 tablespoon Freshly squeezed lemon juice 1 tablespoon Sugar Salt Fresh ground black pepper 3 tablespoons Extra virgin olive oil Wash and trim the string beans, cutting them into 1 inch pieces on the diagonal. Boil in salted water until barely tender. Plunge them into a large bowl of ice water to prevent further cooking. When thoroughly cool, drain and pat dry with paper towels. Combine the beans and onions in a large bowl. Add the vinegar, sugar, salt and pepper. Stir in the olive oil. Taste and adjust seasonings.
