* Exported from MasterCook * Brown Derby Cobb Salad Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Head Iceberg lettuce -- shredd 1 Head romaine -- shredded 2 cups Spinach -- shredded 1 bn Watercres -- stems removed and 3 large Chickent breast halves -- poached and cut into 8 slices Bacon -- cooked & crumbled 4 large Eggs -- hard-boiled & coarse 3 Scallions -- white and green cut 1/4" lengths 3 ounces Blue cheese -- crumbled 2 Tomatoes -- seeded & coarsely 2 Ripe avocados; peeled -- sliced with juice of 1 lime -----RED WINE VINAIGRETTE----- 1/2 cup Red wine vinegar 1 teaspoon Dijon mustard 1 pinch salt 1/2 teaspoon Fresh ly ground Black Pepper 1 cup Light Olive Oil Vinaigrette: Whisk togeher vinegar, mustard, salt & peper, then gradually whisk in oil. Or combine all in a jar, andf shake well. Refrigerate. Salad: Place greens in the bottom of a large shallow bowl and toss with 1/2 cup of the vinaigreete. Arrane the remaining inbredients in rows or in some other pattern over the greens . Toss salad at the table and serve.
