* Exported from MasterCook * Cajun Chicken Salad Recipe By : Bon Appetit Serving Size : 2 Preparation Time :0:00 Categories : Chicken Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **DRESSING** 1/4 Cup Dijon mustard 3 Tablespoons Olive oil 2 Tablespoons Dry white wine 2 Tablespoons Honey Salt and pepper **SALAD** 1 Sm Head Boston lettuce -- Torn, Bite Size 3 Medium Plum tomatoes -- slice thin 1 Small Onion -- slice thin 2 Teaspoons Cayenne 1 1/2 Teaspoons Paprika 1 Teaspoon Pepper 1/2 Teaspoon Chili powder 1/2 Teaspoon Garlic powder 1/2 Teaspoon Salt 2 Large Chicken Breast Halves, Skinless -- boned Whisk mustard, 2 Tbsp oil, wine and honey together for dressing. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Let stand room temp). Toss lettuce, tomatoes and onion together in medium bowl. Divide salad between two plates. Combine all seasoning and spices in small bowl. Thoroughly coat chicken with mixture. Heat remaining 1 Tbsp oil in heavy medium skillet over med-high heat. Add chicken and fry until just cooked through and crusty on outside, about 4 minutes per side. Transfer chicken to plate. Cut crosswise into thin strips. Arrange atop salad.
