                   Caribbean Chicken Salad in Pineapple

   1                    Pineapple -- cut in half,
                        - scoop out pineapple
   2                    Chicken breasts -- boneless
                        - skinless
     3/4   c            Mango chutney
   1       t            Hot sauce
   2       ts           Oil
     1/2   c            Cashews -- coarsely chopped
   2       ts           Green onins -- chopped
     1/2   c            Pineapple -- chopped fine
   1       tb           Myers's dark rum

  Cook chicken by grilling or baking it. Dice up once       
  cooled. In a bowl, combine everything together. Serve     
  in pineapple shells. Serve with finely shredded           
  lettuce and papaya slices topped with a lime              
  vinaigrette.
