* Exported from MasterCook * Grilled Cajun Chicken Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Salads Chicken Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SPICED NUTS 1 tablespoon Butter 1 teaspoon Sugar 1/8 To 1/4 t cayenne 1/2 cup Pecan or walnut halves DRESSING 1/3 cup Oil 3 tablespoons Coarse ground mustard 2 tablespoons Cider vinegar 1 tablespoon Honey 1/8 teaspoon Cayenne SALAD 1/2 pound Chicken breasts; bone -- skin 1/2 To 1 t Creole seasoning 1/2 pound Smoked andouille sausage or -- hot Italian sausage 6 cups Torn mixed salad greens 1/2 cup Red bell pepper -- cut strips 1 large Tomato -- cut into wedges Melt butter in small skillet over medium heat. Stir in sugar and 1/8 to 1/4 teaspoon ground red pepper; blend well. Stir in nuts to coat. Cook and stir over medium heat 4 to 5 minutes or until nuts are lightly toasted. Remove from heat; cool completely. In small jar with tight-fitting lid, combine all dressing ingredients; shake well. Refrigerate until ready to use. Heat grill. Sprinkle chicken breast with Cajun seasoning. When ready to barbecue, place chicken breast and sausage on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until chicken is fork tender and juices run clear, turning once. Cook sausage 15 to 20 minutes or until thoroughly heated, turning frequently. Cut chicken into strips; cut sausage into 1/2-inch slices. Line 6 salad plates with greens, red bell pepper and tomato; arrange chicken and sausage on top. Sprinkle with spiced nuts.
