* Exported from MasterCook * Galatoire's Crabmeat Maison Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Salads Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup Mayonnaise 3 tablespoons French Dressing 3 Scallions -- Chopped Fine 1 teaspoon Small Capers -- Drained 1/2 teaspoon Chopped Parsley 1 pound Lump Crabmeat 6 Lettuce Cups 12 slices Tomato Lemon Juice FRENCH DRESSING 1/2 cup White Wine Vinegar 2 tablespoons Creole Mustard or Other 1 1/2 cups Olive Oil 1/2 teaspoon Salt 1/8 teaspoon Ground White Pepper To make French Dressing, mix together vinegar and mustard. Slowly whisk in olive oil, a little at a time, to form an emulsion. Season with salt and pepper. To assemble salad, mix together mayonnaise, dressing, scalions, capers and parsley. Fold in crabmeat carefully to preserve the lumps. Divide in six equal portions and serve each in a lettuce cup with two slices of tomato on the side.
