* Exported from MasterCook * Calamari Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads Fish Microwave Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound Squid; cleaned -- sliced rings 3 Center celery stalks -- with leaves,thinly s and leaves left whole 1/2 cup Yellow onion -- thinly sliced 1/2 cup Red bell pepper -- thin sliced 2 tablespoons Olive oil 2 tablespoons Fresh lemon juice 1 teaspoon Kosher salt 1/4 teaspoon Freshly ground pepper 12 Oil-cured black olives -- pitted, coarsely cho Okra; steamed, sliced -- opt. Toss together squid, sliced celery, onions, and pepper in a 1-quart souffle dish. Cover tightly with microwave plastic wrap. Cook at 100% for 2 minutes 30 seconds, shaking the dish once. Remove from oven. Uncover and carefully to prevent steam from burning you. Let cool slightly. When cool enough to handle, pour off liquid collected in bottom of dish. Add remaining ingredients and stir to coat. Serve at room temperature. Variation: Calamari and Seafood Salad: Add 8 medium shrimp, peeled and cut in half, and 8 cleaned mussels to the ingredients for Calamari Salad; increase squid to 1 pound, bell pepper to 3/4 cup. Arrange shrimp and mussels toward outside of a 2-quart souffle disk; place vegetables and squid in center of dish. Cover tightly and cook for 5 minutes. Remove mussels from shells if desired. Proceed as for Calamari Salad, increasing lemon juice to 3 Tablespoons. Taste to check seasonings. Serve 8. - - - - - - - - - - - - - - - - - -
