Cut remaining cheese into cubes; set both aside. In medium skillet, over high heat, cook beef, stirring to break up, until beef is browned and liquid evaporates . Drain fat from skillet. Add sloppy joe sauce and cook until heated through. On a large serving platter, arrange lettuce, avocado, hot tomato salsa, tortilla chips, cheese cubes and beef mixture.
