* Exported from MasterCook * French Green Lentil Salad Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup Green lentils 4 cups Water 1/2 cup Onion -- finely chopped 1 Carrot -- finely chopped 1 Bay leaf 2 Sprigs fresh thyme 1 Clove garlic 2 Whole cloves Salt 6 tablespoons Mild extra virgin olive -- oil 2 tablespoons Fresh lemon juice 2 tablespoons Chopped fresh parsley -- (preferably Italian Freshly ground pepper 4 Eggs -- hard-cooked Wash and drain lentils. Put into a saucepan with water, onion, carrot, bay leaf, thyme, garlic, cloves and 1 tsp salt. Cover and gently simmer for 25-30 minutes. Thoroughly drain lentils, then remove bay leaf, garlic, thyme and cloves. Keep warm. In a large bowl, whisk together olive oil, lemon juice and parsley. Season with salt and pepper to taste.
