* Exported from MasterCook * Makahiki Hawaiian Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Salads Seafood Fruits Hawaiian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -----SALAD----- 1 1/2 pounds Medium shrimp -- shelled and 1 cup Bite-size pineapple chunks 1 cup Unpeeled apple -- cubed Lettuce leaves -- deveined 1 cup Orange slices -- in chunks 2 Bananas -- cut into chunks Coconut -- grated -----MAKAHIKI DRESSING----- 1/3 cup Pineapple juice 1 tablespoon Lime juice 1/3 cup Orange juice 1 1/2 teaspoons Cornstarch To cook shrimp, bring 4 cups of water to boil. Add 2 T of salt. Reduce the heat and add the shrimp. Cook for 4 to 5 minutes. Drain the shrimp. Rinse in cold water and set aside. Toss the shrimp and fruit until combined. Place in the refrigerater until thoroughly chilled. To prepare the dressing, combine the fruit juices in a small saucepan, stir in cornstarch, and bring to a gentle boil. Continue to simmer until the mixture until thickened, about 3 to 4 minutes. Remove from heat and cool. Spoon the shrimp mixture onto a bed of lettuce. Spoon the dressing over the salad.
