Set aside. Core pears; cut each in half lengthwise. Brush cut sides of pears with lemon juice . Place 1/2 cup watercress on each individual salad plate. Place one pear half on watercress on each salad plate. Spoon ricotta cheese mixture evenly onto pear halves. Drizzle Piquant Dressing over pears, and sprinkle with pine nuts. Serve immediately.
