* Exported from MasterCook * Couscous Greek Salad Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 cups Water 1/2 teaspoon Salt -- divided use 1 cup Couscous 1 medium Bell pepper; seeded -- diced 2 medium Green onions -- thinly sliced 1 medium Cucumber; peel; seed -- dice 2 Plum tomatoes -- chopped 6 ounces Jar marinated artichoke Hearts; drained -- chopped 1/2 cup Feta cheese -- crumbled 1 medium Garlic clove -- minced (I'd use more) 6 tablespoons Lemon juice 2 tablespoons Olive oil Fresh ground black pepper 1/4 cup Fresh mint or dillweed -- minced 1/4 cup Parsley -- minced Bring the water, 1/4 teaspoon salt and the couscous to a boil in a saucepan. Cover and remove from the heat. Let sit 10 minutes. Cool and break apart. Transfer to a bowl. Add the red pepper, green onion, cucumber, tomatoes, artichokes and feta cheese to the couscous. In a small jar, combine the garlic, lemon juice, olive oil, remaining salt and pepper to taste. Cover and shake jar until the dressing has emulsified. Pour over the salad. Add the mint (or dill) and parsley. Let the salad sit, covered, for one hour before serving so the flavors will blend. - - - - - - - - - - - - - - - - - -
