* Exported from MasterCook * Middle Eastern Cracked Wheat Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 1/2 oz. can vegetable broth 2 cups fresh vegetables -- * see note 1 cup cracked bulger wheat 1/4 cup olive oil 3 tablespoons lemon juice 1 tablespoon dijon mustard 1 teaspoon salt 1 cup chick peas -- cooked 1/4 cup fresh basil -- minced 1 can French fried onions -- divided *NOTE: Use vegetables such as broccoli, red bell pepper and carrots . Cut up vegetables. Combine broth and vegetables in medium saucepan. Cover; bring to a boil over high heat. Reduce heat to low. Cook, uncovered, 2 minutes or until vegetables are crisp-tender. Place cracked wheat in large bowl. Add broth mixture. Do not stir. Cover; let stand 1 hour. To prepare dressing, whisk together oil, lemon juice, mustard and salt in small bowl. Pour dressing over cracked wheat mixture. Stir in chick peas and basil. Cover; marinate in refrigerator 2 hours or until well chilled. Place French fried onions on microwavable dish. Microwave on high 1 minute. Stir 2/3 cup of the onions into salad. Sprinkle remaining 2/3 cup on top. Garnish with additional basil leaves, if desired.
