* Exported from MasterCook * Avocado and Ham Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- WILSON BWVB02B 1 cup Lemon juice 1/4 cup Water 4 Ripe avocados -- halved and chopped 2 Heads red-leaf or Boston Lettuce and patted dry 3 pounds Baked ham -- cut into 1/4-inch and then into 2-inch -- strips 8 medium Tomatoes -- cut into quarters 1 Purple onion -- peeled and cut thin rings 1 cup Lemon vinaigrette dressing Salt and pepper to taste 1/4 cup Parsley -- chopped 1 bn Watercress -- washed and dried garnish -----LEMON VINAIGRETTE----- 1 cup Best-quality olive oil 2/3 cup Lemon juice 1/2 cup Fresh chives -- snipped 2 tablespoons Shallots -- finely minced 2 tablespoons Prepared Dijon-style mustard Salt and freshly ground -- pepper Salad: Mix lemon juice and water together in a small bowl. Slice peeled avocado and dip into lemon-juice mixture. Drain. Line a large serving platter with lettuce leaves. Arrange avocados, ham, tomato and onion rings in a decorative spiral fashion on lettuce leaves. Drizzle salad with lemon vinaigrette. Season with salt and pepper and sprinkle with chopped parsley.
