* Exported from MasterCook * Avocado Jello Mold Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Salads Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 8 cup mold with a hole -- in the middle 2 packages unflavored gelatin 1 cup canned chicken broth 2 1/2 cups mashed ripe avocado 1 1/2 teaspoons lime juice 2 tablespoons grated onion 1/2 teaspoon Worshireshire sauce salt -- to taste 1/2 cup sour cream 3/4 cup mayonaise green food coloring 1. Combine gelatin with chicken broth. Let stand for 5 minutes. Heat slowly and then set aside til dissolved. 2. Combine the mashed avocado, lime juice, salt, worshireshire sauce , grated onion, sour cream, and mayonaise. Add a little green coloring. 3. Fold all together and put into a buttered mold and refrigerate to set. DRESSING (OPTIONAL. Flavor is sweet/tart 6 tablespoons frozen lemonade 2 eggs, well beaten (safer to use 1/2 cup mayonaise) 1 cup heavy cream 1/4 cup sugar 1. Heat the lemonade, slowly add to well beaten eggs, (or mayonaise) then add the sugar. 2. Whip cream and slowly blend into mixture. You can put anything you want in the center of the mold (I like big strawberries) or you can just leave it empty! - - - - - - - - - - - - - - - - - - NOTES : This is the only Jello mold that I like. I don't like sweets and I love avacados. Its good with any number of dishes, but I always serve it when I roast a turkey. Found the recipe in the L.A. Times in 1964, and it is absolutely delicious. The only mold I own is round with a hole in it, so that's what I use.
