* Exported from MasterCook * Carrot-Pineapple Gelatin Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Diabetic Low Cal Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Envelope gelatin -- unflavored 1/2 cup Orange juice -- unsweetened 1 cup Boiling water 1 Sugar subs for 3 tbls sugar 1/8 teaspoon Salt 3 tablespoons Lemon juice 1/2 cup Carrots -- shredded 1/2 cup Crushed pineapple -- drained & 6 Lettuce leaves -- optional` Sprinkle gelatin into cold orange juice to soften. Add softened gelatin to boiling water, and stir until thoroughly dissolved. Add sugar substitute, salt and lemon juice. chill until slightly thickened; fold in carrots and pineapple.
