                        Green Olive-Cucumber Salad

   1      package       Lime-flavored gelatin -- 3oz.
   1      cup           Water -- hot
     1/2  cup           Water -- cold
   1      teaspoon      Lemon juice
   1      teaspoon      Lemon rind -- grated
   1      teaspoon      Onion -- grated
     1/2  teaspoon      Salt
   1      medium        Cucumber -- peeled and chopped
     1/3  cup           Green olives -- onion-stuffed

Dissolve gelatin in hot water.  Add cold water, lemon juice, lemon rind, onion, and salt. 
 Chill until slighlty thickened.  Fold in cucumber and olives.  Pour into a 1-quart mold and chill until firm.
