* Exported from MasterCook * Iowa Macaroni Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Salads Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Elbow or med shell macaroni 16 ounces Can Red kidney beans -- drained 3/4 cup Sweet gherkins -- diced 2/3 cup Celery -- diced 2/3 cup Carrots -- peeled and diced 1/2 cup Cider vinegar 1/2 cup Mayonnaise OR creamy dressin 1/2 cup Heavy cream 1/4 cup Fresh parsley -- chopped 1 tablespoon Sugar -- or to taste Cook macaroni according to package directions. Drain, then rinse under cold running water to cool. Drain well again and combine in large bowl with beans, gherkins, celery and carrot. Stir vinegar, mayonnaise, cream, parsley and sugar in small bowl until well blended, then stir into macaroni mixture. Chill 2 to 3 hours before serving. - - - - - - - - - - - - - - - - - -
