* Exported from MasterCook * Red Hot Black and White Pasta Salad Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Pasta Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Large onion -- chopped fine 4 Cloves garlic -- chopped fine 5 tablespoons Corn oil 1 1/4 cups Santa Cruz Green Salsa 3 tablespoons Chopped fresh cilantro 1 1/2 tablespoons Chopped fresh basil 1 1/2 tablespoons Chopped fresh thyme 3/4 cup Absolute Citron vodka Marinade and Dressing ^^^^^ Chicken and pasta: 2 Boneless chicken breasts 1 pound Ziti or penne pasta 1 Can black beans -- drained & Rinsed 1 Red bell pepper -- stem and Seeds removed -- cut into 1/4- Inch strips 2 Jalopeno chiles -- stems and Seeds removed -- diced 1 Small carrot -- peeled and Chopped 1 cup Chopped tomatoes 1 cup Diced goat cheese -- cut into dice Salt and pepper to taste Tabasco Sauce to taste : Saute the onion and garlic in the oil until soft. Whisk in the salsa and herbs. Add the vodka and simmer for2 minutes. Grill the chicken breasts and cut into a 1/2-inch dice. Pour the marinade over the chicken, cover, and refrigerate for an hour or, preferably overnight. : Cook the pasta, cool and add the beans and peppers. : Stir in the chicken along with the marinade. Add the remaining ingredients and season with salt,pepper and tabasco sauce. : Serve with a chilled mango or papaya chutney and warm tortillas.
