Heat oil in pan, add pork; cook over high heat, turning often, until browned all over . Reduce heat, cook until tender; remove from pan and cool. Combine appl, celery, cucumbers, onions, parsley and raisins in a bowl and toss well. Slice pork into salad; mix well. Refrigerate about 2 hours before serving.
