                        Prize-Winning Potato Salad

  16      pounds        Baking potatoes; peel, cook -- cube
  32                    Eggs; hard-cook -- chop
   2      pounds        Bacon; cook -- crumble
  16                    Green onions -- slice thin
   4      cups          Mayo or salad dressing
  32      ounces        Sour cream
   1      cup           Prepared horseradish
     1/2  cup           Fresh parsley
   2      tablespoons   Salt
   2      tablespoons   Pepper

Toss potatoes, eggs, bacon and onions. Combine remaining ingredients; mix until smooth.
 Toss with potato mixture. Chill several hours. Source: Taste of Home.
